Hi all :)I was very upset when I could not hire my own staff and had to use npc's. But after struggling all day I figured out how to do it. Its really simple.I made two households with high skills and placed them in my world, then I went into manage world and evicted them. I went into manage households and selected not in world sims and then I deleted everybody but my sims and now they are available to work ;) I will follow @crinrict advice and once I have employed them I will add them to the world so they don't get culled as npc's. IF they are played, you can leave them in the unhoused bin. Played Sims will never get culled. I was wondering if that would also work. Thanks for testing.

I am leaving them unplayed. I think once you select them then all goes pear shaped, so they are just around in the game. I run into them in town during closed hours but once the restaurant opens they are all there. Crinrict said we can leave then not in the world once they were evicted they won't get culled. I hope you enjoy having your own sims working in your restaurants ;)

They need to have the played household mark .. then they are safe.

You can't actually switch to their household though as that evicts them from their jobs.

It's still ruined my plans to have a family run cafe. I wanted to expand gradually and take on staff when I could afford it.

@mcrudd That's awesome! For some reason, it's not working in my game; I must be doing something wrong. Here's what I did: I had Sims that were high skilled in cooking, fitness, charisma, comedy...I moved them into a house & then evicted them. I then went to manage world & marked them unplayed. Then I deleted all the other not in world Sims. When I had my manager travel to the restaurant & hire new employees, I got new NPC's. Only 1 of my Sims showed up but she showed up as the chef & not in the host job like I had planned. Not sure what I am doing wrong.
What am I missing?

It takes two trips. You have to go to the restaurant and click on workers to spawn the npc ones. Then go to manage households and delete them. When you go back to your restaurant your sims will be there to select.
