You can't take another career branch?
It seems your Sim can only take one career branch. My Sim is in the Chef branch, he quit so he could join the Mixology branch. But the minimum level of the Culinary career he could find is Head Catere...

I think I saw the easel you mentioned in the Debug items after using the new cheat to show hidden objects... *goes to check in game for you*
Edit: it's still locked in the DEBUG mode, so you would need to get that mod, or have another sim unlock the easel and "give" it to your sim.
