No need to apologize, a question is always valid! On mac, if you're using the EA app no, there isn't an option to play the game without updating. It really sucks, but since you have so many mods + CC, I would definitely NOT update the game. As someone whose game was automatically updated with 2000+ mods and CC.... it was not a fun experience.
To temporarily play, if you would like, you would need to update your game which would break most if not all your mods + CC at this moment. There is a workaround if you really want to play, but you'd have to go into your Sims 4 game folder, move your "Mods" folder to your desktop, update the game, delete .cache from the Sims 4 folder and then launch. But as someone with as much CC and mods (who did this because this is usually the fix.....) it did not help. My game completely broke, as in simple game function did not function. I couldn't even make my sims walk to the next room.
I'm not sure if the experience would be the same for you, so you could always try it! But keep in mind it is NOT a fix to this issue, just a workaround if you genuinely want to play. But judging from the amount of mods + CC, base game does not seem like it would be very fun for you (it's not for me). Also, in general, this is a massive break for the game which EA 100% needs to be held accountable for. I don't want to fear monger you into not if you do genuinely just want to play, but that is something to consider. I'd keep updates on the forum to see any new updates.
