@Superdoggie07 This is going to be causing you issues. iCloud and Sims don't get along well at all. Head over to https://answers.ea.com/t5/Technical-Issues-PC/CURRENT-ISSUE-Sims-4-saves-user-content-disappearing-PC/td-p/12475370 for instructions and support on getting them separated.
That fixed it! Strange that I've been playing for years without any issues before this, but I'm glad it's resolved. Thank you for all your help!
