When you first start out with the mod it can be overwhelming.
You can use a test game and just try different in-game MC CC settings. A lot of settings are self explanatory and some settings pop up a little window with an explanation. When you need/want more specific information, you can always check out those thumblr. pages because MCCC is very well documented.

Your settings are saved in this file: mc_settings.cfg which is in the same folder as where you installed the mod. When you have settings you like and agree on, make a back-up of this file. This file you can keep when you update the mod so you don't have to enable/disable the settings you had set before. Or you can put the back-up back if you want to revert to previous settings.
Check for MC CC updates after every game update and the release of new packs. Also enable the (script)mods again after every game update because EA disables that setting before game updates.
