@DreyAssasin I actually managed to turn my sims back to normal by a weird series of actions and I'm not sure which thing did the trick so I would recommend the whole thing.
1st have your medium Sim visit the ghost Sim. Do a seance circle at their house. Interact with them. Go back home. Invite the ghost Sim over (although at this point they should appear normal in you friend list). When they come over they should be back to normal. Seems bizarrely random but it worked with all three of my ghost Sims.
