Umm...the game does not lock any options or settings if you use mods and I haven't heard about a mod that would do that. I recommend that you repair the game in Origin or EA App if some options are greyed out.
If I continue having problems with this by seeing it again, I might have to do what you just told me because the gameplay, environment, and pack settings should not be greyed out even with mods being enabled. As mentioned earlier I never noticed this problem before until the August 30th update, but for right now the options menu seems fine. I think that it might actually be a glitch instead of a bug.
