I can’t add holidays to my sims calendar but I can in a different save and ever time it’s New Years in my game it goes all the way back in the season and then I have to do it again yes I have my game...

I had the same problem, but in my case I figured out what caused it. I do play on PC, so it might not be the same issue.
I used my base save (as I always do) but changed the season length while I was in manage worlds. After that I was unable to add holidays to the calendar.
Loaded a couple of other saves in which the calendar was untouched and I could add holidays just fine.
So I went back to my base save (the file from before I noticed the issue), this time changing the season length while in live mode and after that I could add holidays.
And the issue is completely gone after doing this - even the previously affected save is fixed. (I did "save as", so that might have done the trick).
For me it sees to be a one time post update problem, might be the UI changes they made because of the added lunar cycle.
