I bought a new PS4 and a new Sims 4 game but an unknown email is connected and I cannot change or delete it because, obviously, I don't have the password. I did not add it, and have never played this game before.

If you're not able to access the email associated with your EA account, you'll want to contact the live support team on the help site here so they can help you get this sorted. Here on AHQ, we can't look into these issues with you as we don't have access to your account details.
Once the live support team has verified that you're the owner of this EA account, they'll help you update the email on your account to something you do have access to instead.
