After i've created my sims they disapper
I removed my mods, deleted the game, repaired, deleted my cache and i'm just not sure what to do at this point to fix this.

what security software are you using ? If you're using Windows Defender and Controlled Folder Access please check if the exe file wasn't blocked.
im on a mac im not sure if theres anything like that on here
probably not, Macs don't usually have antivirus program unless you install one. Could still be a permission problem so you might need a Mac user to help you.
