Move your Sims 4 folder to the desktop from Documents > Electronic Arts and try a new, clean game. This will reset the graphics options in-game too. Play using the default ones for a while, if you can, then change them and see if it causes the issue again. I can see you're running Big Sur which the game runs fine in but lots of updates to the game plus an OS update may have caused the game to panic 🙂
