Open Terminal (Applications > Utilities) and copy and paste the following search command then hit Enter/Return:
find ~ -type f -name "*Slot_*" 2>/dev/null
If prompted to allow Terminal access to various locations on your Mac and drives, click Allow. After a little while it will return the results of the search. You'll know when it's finished searching because the command prompt will reappear. Please copy and paste the results in a post here..
Okay! I did this earlier and it only showed me the save files currently in my game, not the missing ones. Here are the results:

Thanks. Yep, you only have saves in the Documents > Electronic Arts > The Sims 4 > saves folder. Do you not have some sort of iCloud archive folder? If not then maybe you opted to not keep a local copy so the saves you want to load are all in the cloud. You could try a wider search which will search your entire Mac, not just your user account:
find / -type f -name "*Slot_*" 2>/dev/null
That search takes a lot longer but it would be worth doing.

I have an iCloud archive folder but none of my missing mods, save, or tray files are in there. None of my saves are in my iCloud either. I turned off optimization and my document folder isn't in sync with it either. I trie the wider reach and found nothing either. I don't know what other ways to find them..

Unfortunately it sounds like you've lost them during the iCloud disabling process. The Terminal search is the most thorough and comprehensive search, it was searching for save files starting with Slot_. Unless you've renamed them at all in which case they wouldn't load anyway.
