Sims 4 folder on Mac has none of the appropriate data

You’re in the wrong folder. Those are the game files; it sounds like you’re looking for user files (saves, mods, etc). That’s in Documents->Electronic Arts->Sims 4

You won’t be able to find it via search, you have to go to it manually.

[You can disable packs in the settings in the game’s main menu. If you just delete files, it will likely redownload them.]

Edit: Sorry, the disable pack feature has worked for me on Mac, but it's definitely safer to follow Bluebellflora's advice if there have been bugs.
