You may simply be looking in the wrong version of Documents now, for example the one in OneDrive when the game isn't using OneDrive, or vice versa. Once you find the correct folder, it shouldn't move on you unless you mess with the location of Documents overall, or you let OneDrive start syncing your files when it isn't already. So your custom content should stay put as well.
If you'd like help finding your saves, please download Everything, from VoidTools, which is a free and highly efficient search tool. Open it and search for Slot_ (exactly like that), and post the results you see.
