Oh yes, it really is a time of many possibilities. Would make for interesting farming as well with a western style frontier farm without modern tech. Could even be cattle thieves around who'd have a hide out where you could retrieve any animals that are stolen.
And plenty of gothic horror too of course, the perfect time for a haunted mansion. Also a time of vaudeville stage shows that could be interesting professions for your sims to act out.
