I have the same problem. And it seems there is a mix up between the short «course», because the class my sim finishes, is not the same as I started them doing. And one of them is alway impossible to start. Right now, the class in the laboratory is open to start, but the «start» button doesn’t work, and there is no icon for the challenge at the laboratory. Earlier today, it was the icon at the restaurant that was gone. As you can see from the pictures, my sim is totally ready to learn something new…
I have tried what you suggest @Ilois4 , but it does not work.
@KatlaStorm Does leaving your sims idle and force closing your game bring back any pink check marks when you reopen your game?
Unfortunately this current bug makes the sim look free from event even though somewhere in the game background they are in an event.

But I took your direction and did the following:
1) Making sure both of the 2 activities that had caused troubles were open to start (see picture)
2) Making sure to have one sim free to start a job (idle)
3) Turning off and on my iPad.
… And it worked - after restarting my iPad, everything worked fine in my game! 🥳
4) Then. After I had finished the two courses/classes, I force quit the game again. Just to be on the safe side.
