Actually... Stitching images together in Photoshop (or Photoshop programs like GIMP - which is free by the way) isn't that hard.
Start by loading the first image. Estimate how big your final image is going to be, then expand your Canvas to that size.
Load your next image as a new layer. In the layer Mode menu choose 'Difference', then move the new layer over the primary layer until the crossover area turns black (this means they match). Turn the layer Mode back to 'Normal', then combine the layers. Repeat for each image.
There are Photoshop apps for iPad, but I've never really used them so I don't know how well they work.
