I thought you could tap him 3 times per day x I tapped him yesterday and got 1 pill but since then including just now he does nothing but go red, so I'm confused LOL

Don't know why your Big Claw went red after 1 tap. Is it possible that you could have set off your Big Claw without your knowledge by collecting a reward nearby Big Claw (near enough to set him off running outside your line of sight)? Just a guess on my part, based on the evidence provided here.
