Came here to make exactly the same post! Had a drive in the Rally4 peugeot last night and could barely see the road for frequent parts of the stage I was driving. And as you say it affects quite a number of the cars in various ways. It would be a great QOL addition for interior cam users to have what you are saying here! I know the "headcam" view has a small amount of adjustment, but I cant get on with the movement in it.
In fact, it should be more of a "driver's eye" view, as the seat has limited movement. Some people like to sit closer to the windscreen. It improves the view of corners and the general orientation.
EA guys, look how it is done in Assetto Corsa Competizione. There you can even move the driver left and right depending on your preferences.
I made a compilation of several cockpit views. Look how ridiculous it looks sometimes, especially in the C4 WRC
