I tried to match FOV looking at a distant tree, getting the tree to be the same size in each view (head and bonnet). With external FOV set to 0 (45 degrees) and headcam FOV set to 33 (34.5 degrees assuming a linear slider), both FOVs looked about the same. So the numbers are kind of baffling.

Agreed, I came to similar numbers when doing a visual alignment, looking for vFoV of 42 degrees. I settled on about 30 for the headcam as a result. Which do you think is more accurate, the head cam or external settings? I feel head cam is too wide for the claimed FoV, and the external cam numbers seem more realistic.
