Hi, i found a workaround and made a guide on how to fix the issue here:
Fanatec GT DD Pro – How to Fix Severe FFB oscillation after second session | EA Forums - 13701405
I think I should change the title of that post. People don't seem to realize that it's a guide on how to fix the issue, rather than just a random rant about how frustrating the bug is.
I don't know about the ffb disabled or the violent throwing, but the severe oscillation is fixed with a simple downgrade. I wrote every detail in that post
So I just go on the Fanatec app and use an older version? Is it easy to do?

yes! i downloaded it from here:
https://www3.corsair.com/Files/Fanatec/App/FanatecAppInstaller_v1.4.2.3.zip
but had a lot of troubles trying to install it. I was in a loop where the installer failed the installation asking me to reboot the system, but even rebooting and reinstalling multiple times the installation process always failed.
I found an installer log file (cannot remember where, i use "everything" app to search files in my pc) and found some information about the error: the log suggest that there is a problem with the .net framework install procedure, but that was not my case. Before the .net framework another software is installed (cannot remember the name, sorry!) and that was the real issue for my case. I uninstalled it from my pc and let the installer do its work. After another system reboot i could open the Fanatec application.
The first thing you need to do is check the app version, its wrote somewhere inside the app itself. After that you could click the "chip" icon in the upper right corner and write all the firmware you needHope it helps!
