Every time I open the game, all my settings are reset

I play FC 25 through the EA App on PC. Every time I open the game it resets all of my display configuration settings to Ultra, which I don't want. This causes a lot of stuttering during the game and generally causes problems. It would be great for some kind of fix for this.
Also another issue I am having is every time I get a set piece, whether it be a corner or free kick, i get HUGE frame drops and stutters which makes it literally impossible to do anything on them.
