I don't know if it's a bug or not, maybe this is the way the game is supposed to be, but the same thing was happening with me. if the sim stays angry while shooting a video, the video will also be angry. otherwise, the video will turn into whatever feeling the sim switches to while shooting the video. this applies to any feeling.
