I've also been having this problem for weeks. On PC, no mods, every new save. Work around for the time being is either paint it in detailed paint mode or download a mod that adds the colors back as accessories 🤷♀️.
The thing is, painting it in detailed paint mode doesn't do anything at all. Its also not just the nose. The lips, eyes... its all weird and wrong. And its for ALL my werewolf sims in ALL my saves :(

If you're not opposed to using mods (I don't know if I'm allowed to link mods) CiwayW has a mod on curseforge called: Werewolf Nose Color Fix. Apply it as an accessory and it should work just fine. Also, if you go into detailed paint mode on the werewolf's face, you can easily do the lips, eyes, nose without it being messy.

I'll give the mod a try! Hopefully it helps the issue for now, but I do hope it can be fixed in general. I will update you on that.
I will also try the detailed paint mode. It didn't work for the noses, so i doubt it'll work for that too. it's so bugged.

so the mod you suggested fixes SOME of the noses, but not all, and i am using the default replacement file so its weird it only half works
i noticed that i cant edit the eyes of some werewolves too and i can give them human eyebrows. its so weird

Not being able to edit the eyes of some werewolves is a bug, but Human Eyebrows are not. those were always Intended, no matter how stupid I think they look (Werewolves look better with Black Sclera and No Human Eyebrows. lol)
