Well when it comes to adding friends and what not on Xbox it's under the settings section. There are multiple ways this can be restricted, parental controls and so on. Your friend would need to go through these settings to see if any of them are possibly hiding his account. 

In order to find the player log into the game, go to friends, hit the "find friend" option and search for them. If they have anonymous mode enabled it might hide their account (not 100% sure). Those settings can be found under the setting section of the game. Do you have cross play disabled on Switch?
