As for the bugs:
Being able to swap weapons too quickly
I've honestly never heard anyone call this a bug, nor have I personally seen any reports.
Being able to switch guns faster can be good in a gunfight, though depends on the person of course.
(I'd recommend making a bug report on this if you really feel if that's the case)
Broken collision on maps
Making maps takes a lot of time, assets, collisions, interactables and so forth.
Next to that these maps are quite large, issues like these are very specific and can be missed during playtesting.
Honestly, I don't expect them to throw grenades in every spot on the map.
Heirloom issue
Already being worked on
Not something you would find during playtesting, has something to do with player databases and client interactions.
This is too specific for them to have tested.
Users are getting banned because they are exploiting a bug.
There are users who've done this on accident, this happens and they're recommended to contact EA.
However those who try to get literally every heirloom by doing this makes it look like they're doing it on purpose... exploiting is a violation of the agreement and therefore bannable.
Taking away these heirlooms per account takes a lot of time, you don't think they're going to be happy about getting a lot of work from users that exploited this?
If Respawn accidentally leaves in a bug that makes it able for players to gain extra speed (e.c Ult bug that got Taxi banned), if users exploit this in gameplay then they obviously get banned.
It's in the agreement that you do not exploit any bugs, discovering them and reporting them is the correct course of action, but using it for your own gain is literally against the rules.
Knock shields
Have seen some reports on this, though doesn't seem as common.
Do note that when you're knocked down that the camera + shield does not give a proper indication of where you are shielded.
Again, haven't seen a bug report on this for a long time, so if you do feel like it, try making one.
UI Bugs
Sounds like something is going wrong with your client or hardware, have yet to see a report on this...
I'd recommend checking your RAM and storage devices for any issues, next to that repair the game as this can be caused by corrupted game files.
(p.s don't you think it's kind of unfair to complain about these things whilst you have never created a single bug report?)
Audio Issues
These are things that can be present in many games and extremely hard to track down due to:
- Differences in Audio drivers
- Differences in Audio devices (Soundcard + Headset itself)
- Software used for processing the audio (e.c Dolby Atmos)
- Settings set up in the OS for the audio device in question
Even if the issue is something the devs can fix, it's usually really hard as it's almost never reproducable and therefore really hard to pinpoint.
Have you already tried to troubleshoot this issue?
(I've heard that lowering the frequency of your headset via the OS settings has helped some users with their audio problems)
Gameplay
I thought there was crossplay?
Both PC and Console are mixed in servers together.
(Yes consoles themselves can turn this feature off, but then they only get matched with other console users who've enabled this setting, which is a small amount)
And I can understand that aim assist might be getting a lot stronger, especially with the introduction of gyro aiming and flick stick.
"A group of criminals have constructed a drug lab, the Police is not aware of this, hence why the group hasn't been arrested. Therefore creating drugs must be allowed as they haven't been arrested"
Well, that doesn't really seem right.
Yes, users can purchase a device to cheat (which is near impossible to detect), though that does not make it allowed per the UA/ToS/EULA
PC users can also download cheats, if they're undetectable then that doesn't make them allowed.
Do note that PC users are able to create .cfg's that allow them to get constant superglides and enable other types of whacky movement, which can also be unfair to the controller users.
Being able to swap weapons too quickly:
you should have to wait the full duration, like I'm in a fight I'm trying to pick up ammo and my gun gets swapped because I double-tapped E on it. Then I die because I swapped to a P2020.
General Bugs:
My main point is that this game has been out for almost 4 years now and the number of bugs that are still in the game since the early seasons haven't even been touched yet.
"(p.s don't you think it's kind of unfair to complain about these things whilst you have never created a single bug report?)" some of these bugs have been plastered all over social media with streamers and such talking about them and nothing has changed. So why would a single bug report do anything?
Audio:
This is just an excuse if im honest. Every single other game I have played has had had flawless audio, if there are issues its like 1% of the issues that apex has. And the fact that my friends also have these issues in apex means its a problem with the game not my system and drivers.
Gameplay:
I get what you are saying about movement on PC and that's why keyboard + mouse and controller should have separate lobbies don't you think? Its fairer for everyone instead of having to balance aim assist for playing with PC players. The whole thing about detecting these script devices is just plain false, Fortnite will not let you enter a match with said script device, neither will COD so why doesn't apex have this? And also there are a huge amount of players that use full on cheats like aimbot and such, and they obviously dont get banned because I have ran into the same cheater multiple times over the course of a few days. (and YES I have reported them)

Swapping weapons
Okay that's a fair reason, honestly they should just allow us to customize the amount of time we'd have to press it to pick up.
General bugs
The only 2 bugs that go back to the start which you've mentioned is the knockdown shield issue and audio issues.
I've barely heard of users encountering old bugs, even if they are, it's happening to such a small amount of users that it's barely getting any traction.
Bug reports are important because the team will not look at every video and scan for any issues.
Social media isn't so easy for them to find issues, they really have to go viral for them to take notice of such issues.
As for the more recent issues, there have been numerous statements indicating that they are working on it, especially those viral things like the freezing and heirloom issues.
It seems like you've got a problem with these issues, which is understandable, I just find it a bit confusing that you haven't made a bug report yourself as that would help quite a bit resolving these types of issues.
Audio
I've seen so many reports of poor audio in other games from many users, usually it was related to them in some shape or form.
Not saying it's the case here, though do note that there are others that can encounter these types of issues in other games.
After all, I've never had any audio issues with Apex, so does that mean it's actually so widespread?
Have you tried troubleshooting certain audio issues already?
Gameplay
Yeah, giving the options to split off from crossplay might be good, though it's still not something that can 100% be avoided.
Users on PC can just plug in a controller mid-game and use that, which kind of defeats the purpose.
Companies typically don't share their security systems, so if Fortnite and CoD have found a way to block these types of devices then that won't instantly mean that everyone on the market is aware of how to do this.
And cheaters do get banned, a lot... though there are just too many damn cheaters or the same cheaters that just get past their ban to play again.
It's a constant war, typically we don't really see a drop in cheaters unless an extremely big breakthrough for the AC.
(Byfron/Hyperion getting removed doesn't really help either)

General Bugs:
I agree, however, the problem is that when they say "we are working on it" and nothing about it happens. A prime example is Titanfall 2 DDOS attacks. I understand its an older game but they kept reassuring the community that they would fix it, and still have yet to do anything to this day. This lowers my trust is respawn as a whole.
Gameplay:
The only thing I want to say is that games like Fortnite have systems where when you enter a game on one input device it CAN NOT be changed mid-game (i.e. Your controller you just plugged in will do nothing, or vise versa). Which is also a great system to implement in addition to input-device match making. And I guess its fair that Fortnite cant share their security software, but that means there's a way and more than likely its some other devs that have developed this security tool so it doesn't need to be created from scratch. As the end user this is what makes me feel like respawn doesn't care about improving the quality and experience for their players because this security software is only beneficial and will be a huge improvement.

@XHelperZ
I haven't really encountered much bugs in apex myself aside from foot step audio, but imo with such a complained about bug already I'm sure hundreds of people have already complained and reported about it. So why add to it??
In my past experiences on different a game reporting on an already known bug does nothing, but for you to be sent an automated message along the lines of "we're sorry you had to deal with this, but this issue is being worked on."
I feel very much the same would happen when reporting a known bug on apex due to the already well known fact that ea loves sending automated messages to its customers seeking help.
(Not sure where you got the info that he never reported a bug and don't really care, I just don't think it's fair to be condescending about it when these bugs (most of them) are already well known)
All in all I do think you both make fair points.
Yes, it does need to be fixed and yes it does seem like they just don't care because these issues have been persistent for a long time.
Also yes this stuff isn't easy, it takes a lot of time, and it's easy to miss things and it's not lost on me that games like apex rely on their player base to report bugs they encounter, not just complain about them in the forums.
But when new maps and skins take priority over these old bugs, it really makes you wonder.
