Nothing. You have maxed out on levels, so congrats I guess, you beat the game. Because at that point, you don't get any more apex packs and the only reason to level up would just be for legend tokens if you need them to buy a new legend.
Other than that, if you have the battle pass completed, there's really nothing to play for.
This is an issue that people have expressed on this forum many times. All in all, This game has a lack of content problem. It's not so bad when you still have levels to gain and/or a battle pass to complete, but once those things are done, there's not much to do.
If you complete the battle pass, then daily and weekly challenges become worthless. If your level 500, and have tons of legend tokens, leveling up is pointless. Mix that in with events that are basically just sales for skins, the fact that they recycle a lot of the LTM modes, And that there's huge gaps between releases of weapons, legends, and maps, there isn't much to keep you going in the day-to-day of it
