They helped me find my old account, which was great, then I re-linked it to the original account that I had my progress, stats, skins etc on, and I am now staring at a screen that shows me what I would see as if I had just restarted all over again. I linked it to the original account, where I had my progress, and instead of granting me access back to my apex account that I created in 2019, it wiped it clean, and I am back at square one with nothing.

If that's not showing any of your old progress after re-linking the accounts, then that sadly would have been lost with the initial unlink. I'm afraid at that point there wouldn't be any other options we'd have to try restoring that content.
