There is a chance your data will be lost yes, though it's not really possible to say what exactly will be lost.
I personally think that you might lose the progress you've gotten since you linked the account, though I can't say that for sure.
Do note that you don't need to unlink your account to play on origin, so unless you have a really good reason to unlink it, I wouldn't advise unlinking it.

Why would i lose progress,
Would i lose progress only on steam, or also on origin?
What kind of progress gets lost? Because ive got account with 3 heirloom, but AC codes were used trough origin redeem code all the time.
