They could use machine data analysis to form a red flag and then have a team of professional spectators observe gameplay of those players.

Surely EA has enough money to do something like that.

But they do not care so much to be willing to spend money on it. Game looks pretty, there will always be new players coming to game, getting hyped about it and buying one of the packages. That's all it matters really.
