If you are not running it borderless, windows will auto minimize it. Also happens in other games. I do not know how to prevent this.
However, I would suggest you run it borderless. The way it works is that your PC needs to calculate the frames of the game. Then it needs to calculate how to show you those frames. If you run the game windowed, it needs to do an extra set of calculations in order to know how to display it to you. Running the game borderless should make it easier for your PC and you will most likely get more Frames Per Second (FPS).
If you then run into input lag problems, I would suggest scaling down the graphics inside the Settings menu. Either disable effects/sun etc or use a lower resolution. (Or upgrade your hardware, of course)

I had this issue, it is SO annoying.
To fix it
- Go to computer settings
- Google how to make it so your taskbar always minimizes so it comes up only when you drag you mouse to the bottom of the screen
- Open Sims 4
- Go into sims settings
- Click 'Graphics'
- Find 'Display type'
- Change from 'Fullscreen' to 'Windowed Fullscreen'
Works perfectly for me 🙂 Hopefully it does yours too!
