It's indeed very unfortunate to hear that your settings keep resetting itself. However, I highly suspect it's something on the PC itself that keeps doing this/doesn't give the game permanent permission to access/write in the Documents folder to save the settings.
One other block I can think about is the following: if you're using Windows Security (Windows Defender), go to Protections History after trying to open the game. In some cases, you can see if Windows was blocking access to a "Protected Folder" every time you tried to open the game.

Normally I would agree with you but read a news article yesterday that EA had acknowledged the issue and is working on a fix. The game seems to think the game has crashed when you close the game and resets.
