I have same issue on xbox series x. From time to time at the beginning of match you are getting no load for your infantry(empty slots) and your skins and vehicle settings are standard ones. When you leave match and get back to main menu infantry loads back on, but skins and vehicles setting getting reset to standards ones.
This issue happens every second game when playing on cross platform with PC in same EA group. When playing on your own not so often.

Short Update here: friday night (after i played 4hrs on the new patch and restarted the game) some vehicle settings and my game settings were reset again, but since then not anymore as of today!
@direct3rand another update, it has happened again at the end of the round with the ak and the nightbird, but somehow it looks like it has todo with quick equipping the new things you unlocked, atleast this would explain why it does not happen that often anymore as I do not unlock so much anymore with higher levels.
So when I'm pressing quick equip after I unlocked new things at the end of the round, the chance that on the next restart (or sometimes even next round) of the game this type of vehicle/weapon has resetted is pretty high.
