Battlefield 1 guns won’t let me choose.
Battlefield is only letting me use 1 main gun regardless of the class I am, can’t be a good sniper with no scope.

To use other guns you will have to unlock them or buy them. Some snipers don't come with a scope if I remember correctly.

It sounds like you might have been playing Back to Basics mode. That mode only let's players use bolt-action rifles and pistols.
