Hello. I know the game has some achievements if you complete it from Medium difficulty and above. Problem is: I switched to Easy to let my gf play for a while. Can I just switch to Medium again and ...

If I were you, I’d recommend she play on hard mode. But mainly for the learning curve, in terms of resource management and combat strategy.
