I had the same problem and after an hour on live chat with 3 different techs was told there was no fix currently. I had prior to contacting them tried a hard reset, loaded an earlier save and cleared my persistent cache. I decided to try completing unplugging my power block from the wall until the light went off then plugged it back in and restarted my Xbone and it fixed the problem instantly. Hope this helps

- I just got my Xbox back a week ago from being repaired. The ONLY game and ONLY profile on it ATM are mine. I have experienced the inventory bug, but also gear disappearing from my characters. Suddenly my Mage has no rings, belt or amulet, and there are no rings at all in my inventory.
But here's something weirder... Quests I know I completed on this game have popped up again. The map was once clear in that area, and now it isn't. I have now done the missing soldier quest ( you know, the gal having a dalliance with a Mage) and the widow who wanted her husband's ring back. I have also reclaimed the area with the cultists, and reclaimed the camp next to the valley with the dragon. Granted each of these areas had had new quests added as I opened up more of the game elsewhere, so I'm guessing the bug re-covered the map and just kind of did a whole reset.
My point here is that I do not have a cluttered cache, there is literally nothing else on my Xbox!
Before we sent my Xbox out for repair, I had played through to the end of the quest in the winter palace. I noticed no glitches, no disappearing items. I had played it on my husband's profile, and had made choices I wasn't happy with so I thought I'd just start all over and re-do those choices since it had been so long anyway (over a month).
I've uninstalled the game and am reinstalling at this point, but now I'm afraid to add my husband's profile and download my old saved game, because what if this bug migrates and ruins that game too? Is there any other possible answer? Is this even being worked on? Please tell me this is being worked on! This has been happening to me, as well.
Schematics I purchase or find are gone. No clue what happened to them. Not all of them, but the most recent ones such as the high-end Masterwork stuff found in The Hissing Wastes. Spare weapons in my inventory, gone, etc. This was 2-3 months ago. I loaded up a save from that Inquisitor to play the latest DLC.
As I'm playing Jaws of Haakon, literally nothing I pick up survives as save or a fast-travel. I started the DLC with 3/75 capacity. I'll pick items up as I play the map. I'll check and I'm at 25/75. Then I'll fast travel, and bam! Back to 03/75.
Veil Quartz didn't show up at all. As in ever. I'd pick it up, and it never even made into my inventory.
And then...funny thing.
As I'm in the Old Temple of Jaws of Haakon, I check my inventory and suddenly I'm at 72/75. Everything I had picked up since playing the DLC, plus most of the stuff lost 2-3 months ago, had re-appeared.
No clue how it happened or why.
