I found a workaround if anyone else has the same problem as me...
Delete the 'bfv.exe' file found in C:\Program Files\EA Games\Battlefield V
Open EA app
Go to Battlefield V
Press 'download'
Literally just downloads the missing .exe in a few seconds and then it's playable
