Same issue for me.

I found that if I go into the controllers screen mid game and go back & forth between configs (without changin anything), then return to the game, that might revert to the desired behaviour where the standing butten (circle for me) is back to performing tackle & that R1 is back to being a 2-man pressure.

But still I have to do it every single game, in game & it's a terrible expiriance!

BTW when the issue occuers (which is always), there is no way to perform a tackle (in any other button).
