EA apply a passing penalty when you've strung a certain number together. After that, they start making mistakes so that you don't retain possession for "too long". As to your players being slow and sluggish, it's likely just delay on their servers. It's very common, especially if you are playing at peak hours. My only suggestion would be to play off peak. It's the only way I get good gameplay.
