The best way to defend is switch between 2-3 defenders and pinch the person with the ball. Then when you think they are going to pass switch to your cb while holding second man press. This will force him to pass the ball and when you step up with your cb you should be able to intercept the ball.
Anders is probably the best at doing it.
That rubbish is the main reason I'm not buying fc 26.
I honestly think it contributes to players feeling stiff and heavy and non responsive because the press is constant from 3 players for the full match, it completely ruins the game.
