I had a 20k XP consumable and a 30k XP consumable, I applied the 30k XP consumable first on accident and now my player is over level 80 and I can’t apply the 20k, is there a way to reset it so I can apply my 20k first then my 30k so I can reach a higher level?

Unfortunately, no. Once an XP consumable has been applied in Clubs, it's permanent and can't be removed or reordered. EA doesn't offer a way to reset your XP progression or recover unused XP consumables, so if you're already past the level where the 20k XP item can be used, it will likely remain unusable.
