I had the same trouble when I fought Saren the first two times. I noticed that the game started glitching when I started using my Tech Attacks against him (Shepard was an Infiltrator). The third time, I just equipped my pistol with the shield-piercing bullets, Proton Rounds VI I think, and just took down Saren with my gun. I did not bring up the Tech ring or the Weapon ring at all. The ending occurred fine after that. Try beating Saren with just your equipped weapon and see if that helps anything.
I just faced off with Saren last night on my PS3. Lo and behold the game froze during my battle with him (after the conversation choices that - SPOILER ALERT - culminate with him blowing his brains out). After several instances of this freezing problem, I have deleted the Mass Effect game data and I'm now reinstalling it. I'll get back to you on how effective this is... It would be great to actually hear from Bioware as to whether this issue is being worked on and potentially patched in the near future. If this breaks the Mass Effect experience for me, I'll definitely be earning some extra Renegade points.
