I happened to figure out how to unbind because EA wouldn't say and I want to help anyone else looking. for keyboard, as you go through, rebind everything to the same key, the previous item will become unmapped. One thing will be bound, but it fixed the issue for me. same thing for the wheel, use your controller and bind everything to one thing on your controller, and everything but one thing will be unmapped.
Hi! Sorry if it's a little late, but I just bought the game yesterday and I think I solved the problem with the PS4 controller unbinding the keys.
I made a 2 min video with the explanation but basically it is that you put all the keys with the same letter on the wheel and the keyboard.

After pressing X, "accelerate" at the top of the list should change color ,use up down arrow keys to move to button you want to change.Press Enter and it will start flashing, then push the key/button you want to assosiate/use.After press esc a couple of times, then a message will apear asking if you want to save the settings, press yes.
no seriously, using the keyboard, how do you actually unbind the key??? wtf?? hello, ea? is the payback support gona be this weird?????

Doesn't resolve the issue, when pressing X, how do you UNBIND ffs
I pressed X then how do i unbind they key ?
In game you must do the following:
- Go to Settings -> Controls
- Use Page Down to navigate to "Wheel" (be careful, you read it right - "Wheel")
- Press "X" to customise and UNBIND every single key/action - but ONLY for the Wheel
- Save all these settings
