Who are these referees?

Is there a reason the NHL series doesn’t have real life officials in the game, I’ve never seen so many ponytails on a rink . Also having the referee skate over and announce the penalty would be a nice touch. These things help the overall game experience. (Also when will we see the new Penguins 3rd jersey in the game)
