I just don't think that they all need to be nerfed. Part of the fun is having your heart skip a beat when your opponent plays something that's hard to deal with.
Also; keep in mind that you can't directly compare plant cards to zombie cards. The different play mechanics warrant different costs for similar cards.
I understand. I decided not to nerf Zombie King or Coffee Zombie, because while they are quite annoying cards, I still want players to feel good about themselves winning with their newly-earned super-rares and such. Plus, like you said, your "heart skips a beat" whenever the opponent plays one of these devastating cards.
