And not all chests have 20k. I wish they did, but most of them have backyard items. And once all those chests have been opened, which will be sooner rather than later, the only uses for stars will be leveling and Infinity Time. As to the stars lets face it stars only serve one purpose they're there as a time sink. Once you get all the Infinity characters unlocked star will once again be useless by your logic so your point is moot.
Infinity Time also gives you a decent amount of coins. And the value of said coins goes up depending on what wave you make it to, and the value will increase even more once all you get is coins and no legendary loot. So my point is not moot.
