Jedi survivor defaults to jedi grand master halfway through game

Jedi survivor. Half way through and it defaults to jedi master and can change to any other difficulty. Game now not fun. Bought new Xbox to play this game and some others coming out. 2x wasted money or can you fix? I found 1 other thread with 3 people having issue and no responses. 

Restarted xbox, loaded file, took disk out, let set, traveled planets and try change. Nothing
