Is it on the character selection screen that the system asks you to confirm your email address? Would you be able to try using a completely different email address? It would need to be an address that is not linked to an EA account or SWTOR account already.
When you try to log in to the website, does it ask you to verify your email address, or can you log in directly? That could be another way to update the email address in your account details. However, the system can be slow to send the verification email, so after updating the email, it might take up to 15 minutes for the email to arrive.
