Funny looking through the top 50 on my server, there are only 4 teams (mine included) that don't run Phasma or Sid as leader. Also seems that I am the only droid team on the server.
You gain about 2k hp and some additional attack going up from 5 star to 7 star. I currently share your dilemma and decided its probably better off to start farming QGJ. It will take you about a month farming Poe from 5-7 stars with two cantina refills per day. I currently have QGJ at 3 stars and in the same amount of time I can get him to 6 stars.
But QGJ can't taunt. I do not understand the synergies except getting an additional attack in on a droid team when they specialize in AoE's where with Poe, if he survives an entire round, you are guaranteed to have all your droids attack a 2nd time and probably HK and 88 attacking a 3rd time if they hit their AoE crits.
I am farming QGJ for other compositions. As is, my droid team is pretty much complete, HK47, Poe, Poggle, IG86 and IG88. At some point I will swap out 47 for GS. What I am talking about is cantina shipment priority and between getting Poe to 7* versus getting QGJ to 6* in the same amount of time I am leaning toward QGJ
Currently my Poe last at least one round and that is good enough for me. He taunt, expose a few people take away some turn meter giving my droids the opener that's it. A day might come when my Poe cannot survive one turn and maybe by that time he has already been nerfed or is no longer part of the meta.
