I will do some research on their characters etc a bit and get down to it once I have some time.
Ki Adi Mundi would most likely be a character with high evasion + counter attacks etc since he was proficient in Makashi (same as Dooku) and was also one of the wisest jedi.
As for Shaak Ti she would most likely be a support type character that greatly buffs and probably heals allied units (most notably Clones) due to her wise and caring nature.
